Stir-fried Eggs with Tomatoes

(Fanqie Chao Dan)

Ingredients

2 tomatoes

4 eggs

2 spring onion shoots

Seasoning

1 tbsp. ketchup

1 pinch salt and sugar

Method

Slice tomatoes, dice the spring onions, then crack eggs into a bowl and beat lightly until consistently mixed.

Heat 3 tbsp. of oil in a wok and sauté egg mixture until it solidifies. Add spring onion and tomatoes, while continuing to stir-fry. Transfer to a serving dish and add ketchup, salt and sugar to taste. If the mixture still seems dry, add a little water and stir the ingredients well. Serve.
