Bitter Melon Braised in Brown Sauce

Ingredients

1 bitter melon

6 fresh fragrant mushrooms

Cooking oil

Seasoning

2 tsp. granulated sugar

6 tsp. soy sauce

1 tsp. rice wine

1 tsp. sesame oil

Coriander, minced

Method

Wash and cut the bitter melon and the fragrant mushrooms into bite-sized pieces.

Heat a little oil in a wok and sauté the bitter melon and fragrant mushrooms for about 3 minutes. Remove from heat and drain the oil.

Heat a little oil in another wok and toss in the granulated sugar. When the sugar liquifies, add the bitter melon and fragrant mushrooms. Season with the soy sauce and rice wine, and thin with a dash of water.

Reduce to low heat and let simmer for about 10 minutes until the sauce is reduced.

Serve with a dash of sesame oil and a sprinkle of coriander.
