Stir-fried Celery and Fish Fillets
(Xiqin Yupian)

Ingredients
250 grams (9 oz.) fish fillets
4 sticks of celery, cut into sections
Sliced ginger
Shredded carrot
(A) cornstarch, cooking wine, soy sauce, sugar
(B) salt

Method
1. Cut the fish into fillets and marinate in (A) for a few minutes.
2. Stir-fry sliced ginger in 3 tbsp. oil until fragrant, and
remove. Stir-fry fish fillets until done, remove and put to one
side.
3. Stir-fry celery sections and carrot in 2 tbsp. oil, add fish
fillets and (B). Serve.
