Steamed Pumpkin with Chicken
(Nangua Zheng Ji)

Ingredients
800 grams chicken
80 grams glutinous rice flour
1 pumpkin
|
Seasoning:
25 grams chopped ginger
25 grams chopped garlic
10 grams brown sugar
20 grams chili sauce
20 grams sweet bean sauce
2 grams Chinese prickly ash powder
2 pieces red preserved bean curd

Chop the chicken into chunks, and marinate in the seasoning.
Mix in glutinous rice flour, and steam until cooked.
Slice off the top of the pumpkin and put to one side. Scoop out
the insides and clean. Steam until cooked. Stuff the seasoned
chicken inside the pumpkin, cover with the pumpkin top, and steam
again.
Remove and serve.
This fragrant, country-style dish has a tender texture. Perfect
on a wintry night.
