Stir-fried Shredded Pork with Eggs and Fungus
(Muxu Rou)

Ingredients
100 grams pork fillet
50 grams green rape
20 grams carrots
5 grams soaked black fungus
3 eggs

10 grams scallions
2 tsp soy sauce
10 grams cornstarch
1 tsp salt
1 tsp cooking wine
1 tsp sesame oil

Rinse the pork, cut out the sinew and shred. Beat one egg, mix
with soy sauce and cornstarch and coat the pork with the mixture.
Set aside.
Clean and shred the green rape, carrots and fungus. Beat the
remaining eggs and mince the scallions.
Heat vegetable oil in a wok, and add the coated pork shreds.
Stir-fry for a while, remove and drain off the oil.
Heat oil in the wok and stir-fry the eggs. Add green rape, carrots
and agaric, followed by salt, cooking wine, soy sauce and stir-fry.
Sprinkle on the sesame oil. Remove and serve.
An easy to cook, savory and succulent dish.
