Chicken and Potato Casserole

(Tudou Guanmen Ji)

1 chicken leg
6 potatoes
4 shiitake mushrooms
1 scallion, minced
2 slices of ginger
8 red dates
10 grams soy sauce
10 grams soy sauce, 5 grams cooking sherry, 5 grams sugar, 1 gram pepper

Chop chicken leg into small pieces and marinate in seasoning (1) for about 20 minutes. Deep-fry in oil for 5 minutes until brown, and then remove.

Peel potatoes and cut into irregular chunks, deep-fry in oil for 5 minutes until brown, remove, and place in a casserole dish.

Heat oil in casserole, stir-fry minced scallion and ginger until fragrant. Add chicken and shiitake mushrooms, stir for a while. Add seasoning (2) and 500 grams water, and cook for 10 minutes. Remove to the casserole dish containing potatoes. Cook until potatoes and chicken are tender. Serve.
