Chicken
and Potato Casserole
(Tudou Guanmen Ji)
Chop chicken leg into small pieces and marinate in seasoning (1) for about 20 minutes. Deep-fry in oil for 5 minutes until brown, and then remove. Peel potatoes and cut into irregular chunks, deep-fry in oil for 5 minutes until brown, remove, and place in a casserole dish. Heat oil in casserole, stir-fry minced scallion and ginger until fragrant. Add chicken and shiitake mushrooms, stir for a while. Add seasoning (2) and 500 grams water, and cook for 10 minutes.
