250 grams oil half an egg white 5 grams cornstarch 2 grams each of chopped spring onion, ginger and garlic 8 grams pepper grains 1 tbsp. XO sauce 2 grams sugar 2/3 tbsp. oyster sauce
Trim and slice beef. Mix egg white and cornstarch, and soak the beef in the mixture for 15 minutes. Heat some oil in a wok, add coated beef slices. Quick-fry, remove and drain. In the same oil, add chopped spring onion, ginger, garlic, and XO sauce. Add the beef slices and stir-fry until brown. Add sugar and oyster sauce, the mixture of cornstarch and water, sprinkle pepper on top, serve. Features: Savory and slightly spicy. |
