Fillet of Sole with Mashed Garlic

(Suanxiang Yinxueyu)

300 grams sole
20 grams mashed garlic
500 grams mixture (1 cup) mashed garlic and water
1,000 grams (2 cups) oil
7 grams salt
8 grams (1 1/2 tsp) chicken stock
13 grams granulated sugar
20 grams cornstarch
A little grated cheese

Scale the sole, and cut into cubes.

Add fillet of sole, salt, chicken stock, and sugar to the mashed garlic and water mixture, marinate for two hours, remove and drain.

Coat the fillet of sole evenly with cornstarch and grated cheese.

Heat oil to 150 degrees centigrade, add the fillet of sole, deep-fry for a while and remove.

Add the fried mashed garlic to the fillet of sole, arrange on a plate, serve.

N.B.: Maintain a temperature of 150 degrees centigrade, as a higher temperature may burn the sole, and a lower one may make it fall apart.

Taste: A mouthwateringly garlic flavor .
